Triple Love Granola!

for a morning punch of gratitude ♥

(All nuts & seeds raw)

  • 4 cups rolled oats
  • I cup large coconut chips
  • 1 cup chopped almonds
  • 4 tbsp sunflower seeds
  • 4 tbsp pumpkin seeds
  • 2 tbsp flax seeds
  • 2 tbsp sesame seeds
  • ½ cup maple syrup
  • ¼ cup coconut oil
  • 1 tsp vanilla extract
  • a pinch of salt if desired
  • 1-2 cups dried fruit (I like mulberries, goji berries & Thompson raisins, but cranberries, cherries, ginger chunks, diced apricots, figs, etc etc could all work.)

preheat the oven to 300. If your coconut oil is quite solid, you can use the warming oven to soften it.

using your hands, mix the wet ingredients with the dry in a large bowl until evenly coated. leave off the dried fruit for mixing in later.

spread evenly 2 baking sheets and bake for 15 minutes, checking and mixing every 5.

let cool completely (move to a cool baking sheet if it came out on the toasty side) before folding in fruit.

eat ceremonially and with loving appreciation !! ♥

“Magical” Pumpkin Zucchini Banana bread muffins

  •  2 ripe bananas, mashed
  • 1 medium zucchini, grated
  • 2 cups pumpkin, pureed
  • 2 eggs
  • 1/3 cup coconut oil
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp salt
  • ¼ tsp nutmeg
  • ¼ tsp cloves
  • ¼ tsp cardamom
  • ¼ tsp garam masala
  • 1 tbsp grated ginger
  • 2 1/2 cups flour (I used bread flour)
  • 1 tsp baking soda
  • 1 tsp baking powder

Whisk the eggs in a large bowl, then blend in wet ingredients—reserve the zucchini and ginger shreds to fold in at the end.

Then mix the flour and baking powders together in a separate bowl with the spices, and then fold into the wet batter until just blended. Finally, fold in zucchini and ginger.

Baked at 350 in two oiled muffin pans for 25 min, or until an inserted fork comes out clean.

Feel the magic!
