Triple Love Granola!
for a morning punch of gratitude ♥
(All nuts & seeds raw)
- 4 cups rolled oats
- I cup large coconut chips
- 1 cup chopped almonds
- 4 tbsp sunflower seeds
- 4 tbsp pumpkin seeds
- 2 tbsp flax seeds
- 2 tbsp sesame seeds
- ½ cup maple syrup
- ¼ cup coconut oil
- 1 tsp vanilla extract
- a pinch of salt if desired
- 1-2 cups dried fruit (I like mulberries, goji berries & Thompson raisins, but cranberries, cherries, ginger chunks, diced apricots, figs, etc etc could all work.)
preheat the oven to 300. If your coconut oil is quite solid, you can use the warming oven to soften it.
using your hands, mix the wet ingredients with the dry in a large bowl until evenly coated. leave off the dried fruit for mixing in later.
spread evenly 2 baking sheets and bake for 15 minutes, checking and mixing every 5.
let cool completely (move to a cool baking sheet if it came out on the toasty side) before folding in fruit.
